After a year of diligent care of the vineyards, the harvest begins, generally in the first week of October. During the month of September, the grapes from all of the parcels are sampled, analyzed and tasted regularly to monitor their development. When harvest begins, we already have indispensable information in determining which parcel will go into a particular style of wine.
The grapes are hand-picked and then placed in small crates. Inside the winery, all of the grapes are placed on a selection table where only the highest quality grapes are chosen for production.
